Cortese is a grape variety that prefers marly lime soils that are not too loose, and a microclimate that is not too hot, in order to maintain a good level of acidity.
The grapes undergo soft pressing and the must is fermented in purity at a temperature of 15-16°C. This is followed by a short period of bottle ageing to develop the characteristics and structure of the wine.
