The Nebbiolo is the most important black grape variety native to Piedmont and is a sensitive and extremely demanding variety in terms of environment, soil, and climate. Harvest takes place in mid-October when the autumn fog (in Italian 'Nebbia') envelops the hills: hence the origin of the name is believed to come from here. Vinification is traditional with a 15-day maceration. This is followed by malolactic fermentation and aging in steel where the aromas and intense flavor of the wine are enhanced.
